Pork Chops & Red Potatoes

Another wonderful hit with the family!!!

Of course the man-child and I picked out the onions. I can't have them because baby tends to get gassy and an irritated bum when I eat them and the oldest just doesn't like them. No worries though, daddy never has a problem with eating anything and everything that is left over. :)


Ingredients:

Directions:


  1. Heat Oil in non-stick skillet over medium-high heat.
  2. Add chops and cook 10 minutes or until well-browned.
  3. Remove chops.
  4. Add onion bell pepper and oregano.
  5. Cook five minutes or until browned-stirring occasionally.
  6. Add chops, chicken broth.
  7. Heat to boil.
  8. Cover and cook over low heat 5 minutes or until done.
  9. Serves 3.

Garlic Red Potatoes

Ingredients

  • 2 pounds red potatoes, quartered
  • 1/4 cup butter, melted
  • 2 teaspoons minced garlic
  • 1 teaspoon salt
  • 1 lemon, juiced
  • 1 tablespoon grated Parmesan cheese

Directions

  1. Preheat oven to 400 degrees F.
  2. Place potatoes in an 8x8 inch baking dish.
  3. In a small bowl combine melted butter, garlic, salt and lemon juice; pour over potatoes and stir to coat. Sprinkle Parmesan cheese over potatoes.
  4. Bake, covered, in preheated oven for 50 minutes. Uncover and bake an additional 10 minutes, or until golden brown.
